We all love butter – it’s rich, creamy and makes any food better, improving both texture and taste.  Butter is one of the tops reasons many find it so hard to switch to a vegan diet, especially those who love baked goods. After all, butter is so central to baking that as soon as people hear about eliminating butter from a recipe, they expect the results will be horrible.  The good news is, you can actually substitute butter in baked goods with many alternative good fats derived from plant sources:

  1. Coconut butter

This includes the meat of the coconut and has a sweet, nutty taste to it. If you choose to use coconut oil, make sure to have it at a temperature slightly lower than the room in which you are baking so that it remains in solid form.

  1. Almond butter

Almond butter is less commercially available, but if you are lucky enough to find it in your supermarket, it makes an excellent substitute to dairy or even peanut butter. Make sure to choose one that has been made using a cold-press process.

  1. Peanut butter

This is pretty much self-explanatory, but if you wish to use it in baking, remember to use the unsalted, unsweetened version. If you wish, you can also make it at home using your own blender and adding whatever flavor you wish.

  1. Vegan margarine

Beware that some brands may contain traces of lactose and other amounts of dairy products, so make sure to check the ingredient list before your purchase.

  1. Soy butter

Many commercial brands often would make it taste like peanut butter, but this can taste exactly like dairy butter if made in the right way. You may also wish to make your own by buying your own soybeans.
